Stone Fruit Chia Seed Pudding

Chia seed pudding is a light breakfast that actually packs a protein punch! Chia seeds are a complete protein, meaning that they contain sufficient quantities of all nine essential amino acids required for humans. While animal proteins are complete proteins, very few plant sources are, making chia seeds a super special seed.

The Recipe

For the Chia Seed Pudding:

  • 3 tbsp chia seeds
  • 3/4 cup almond milk
  • 1/2 tsp vanilla extract

Mix the ingredients together and place in the fridge for 6+ hours or overnight. This allows the chia seeds to absorb the almond milk.

To Top:

  • 1/2 peach
  • 1/2 nectarine
  • 5 cherries
  • 1/2 plum
  • 1/4 cup strawberries
  • Sprinkle of chia seeds

Why It’s Good:

  • Chia seeds are a good source of omega-3s and are a complete protein.
  • Buying and eating foods that are in season are good for your pocketbook and good for the environment. Stop by your local farmer’s market to see what is growing in your area!

When the chia seed pudding is firmed up and gelatinous, take it out of the fridge and top it with the toppings. Feel free to modify based on what you have on hand. Chia seed pudding makes a great base for a number of different fruits or toppings. Go ahead and experiment!
