Banana Oat Walnut Muffins

As a kid, I used to attend a dry-land training camp in the summers for ski racing. The program was all about fitness, nutrition, and goal setting. We were literally running by six every morning then too!

One of the best parts of the camp was going into the kitchen to make their (at the time) crazy health recipes. Think avocado black bean brownies, carrot muffins, almond date bars. You get the picture. Ironically, all things that are so normal for me and the rest of the RunningBySix crew now!

Lucky for us, they have started posting their recipes on their blog and they do not disappoint! Check out this HIGHLY customizable power muffin recipe. I turned them into banana oat walnut muffins, but as the recipe says, you can add whatever fuels you best. Happy baking!
